Method:

Prepare Egg Plants with 4 Cuts and Masala Inside.

Masala: Heat up Besan Powder (50%). Mix Besan Powder (55%) with 30% Cumin/Coriander Powder, 3% Salt, 10% Red Chilli Powder, 2% Turmeric Powder.

Take Oil, Heat It, Put Mustard Seeds, Cumin Seeds.
Put Garlic (lot of them, 4 or 5 big pieces)
Put Onions.(couple of small ones)
Let it heat till Onions turn golden brown. (Lid Close)
Put Turmeric Powder. (1 tea spoon)
Put Tomatoes.
Let it heat for another 2 minutes (Lid Close)
When it becomes half liquid, Add 5 small Baigans (Egg Plant).
Egg Plant needs to be cut on 4 sides with MASALA inside.

Close the Lid and let it cook for 2 more minutes.

Add Vertically cut, Potatoes. Stir them and let it cook with Open Lid for about 2 minutes.

Add little water, so that Potatoes does not stick at the bottom.

Add, Salt, Red Chilli Powder and Cumin/Coriander Powder and stir it.

Put one and half glass of Water and put the Lid On.

Let it cook for about 15 minutes (till you can break the potato with hand).

Add Coriander and Fresh Lemon Juice for garnishing.

(You can add Sugar as well, 2 spoons, depending upon your taste).

I normally add, Garlic Chutney and Sugar and Lemon Juice on top to add the flavor and Paprica for red colour)
